Butternut Squash Bisque


  • 1 small chopped onion
  • 4 T. butter
  • 1 peeled and cubed butternut squash
  • 1 C water + 2 C chicken broth
  • Salt & pepper to taste
  • Pinch of cayenne pepper
  • 1 8oz pkg of cream cheese, cubed


In a large saucepan, sautee onions in butter until tender.  Add cubed squash, water, chicken broth, and spices.  Bring to a boil and cook until squash is tender.
Using a wand blender, puree squash.  Add cream cheese and puree until well blended.  Heat through but do not boil.
