Old-Fashioned Baked Fried Chicken


  • 6 chicken leg quarters (w/skin)
  • ½ C. organic cornmeal
  • ½ C. organic flour
  • 1 T. minced garlic
  • Mineral salt and pepper to taste
  • Additional seasonings of choice
  • Oil and/or lard for frying
  • Water


Preheat oven to 325° Fahrenheit.  Combine cornmeal and flour.  Heat oil/lard in a cast iron pan on high heat.  Coat thawed chicken with cornmeal mixture.  Place in hot pan and brown chicken on both sides.  Partially cover with a lid to control splattering.  Place browned chicken in a large, glass baking pan and sprinkle with generous amount of salt.  Sprinkle with pepper, garlic and any other additional seasonings.  Add 1” of water to pan.  Securely cover with lid or tin foil and place in oven.

Bake at 325° for 1 ½ hours.  Remove chicken from oven and remove cover.  Carefully drain broth and set aside or use to make gravy.  Change oven temp to 350° and return uncovered chicken to oven.  Bake for 30 minutes or until chicken is golden brown and crispy.  Ready to serve!
