Tart + Delicious + Buttery 

RHUBARB CHEESECAKE BARS

CRUST  
2 C flour
1/4 C sugar
1 C cold butter (salted)

Mix flour + sugar then cut in butter until resembles coarse crumbs. Bake in preheated oven at 350* for 10-12 min.

RHUBARB: Spread 5 cups chopped rhubarb on top of baked crust.

CUSTARD
2 C sugar (I used 1.5 C) 
7 T flour
1 C cream
3 eggs
1 8oz cream cheese
1 tsp vanilla extract

Beat cream cheese then add whisked cream + eggs. Mix with sugar + flour until smooth. Pour over rhubarb and bake approx 45 min. Cool before cutting into bars.
